If it's really stuck on land, like in the middle of the caves on mountain island, you can type the console command 'item terraformer' to give yourself the terraformer. Use the terraformer to dig a tunnel underneath the seamoth until you reach water level, then dig a tunnel into open water. I got there, and parked my seamoth too close to the beach. the aurora is going to be a problem if it is stuck on there. the good news is that the seamoth is pretty cheap overall. i try to have one dedicated seamoth at every base. and one that roams between them.

Build as high as you can, connect a pipe, and dismantle the bottom. Not sure how it goes and how you can climb the pipes. Once you are up there and get into the seamoth, it should obey laws of physics again. Probably not worth the hassle unless you have already saved. Hope they still maintain bugfixes.
